Spring Break Cupcakes

I'm not into St. Patrick's Day, but these cupcakes are perfect for spring! Abby was so excited to make them when I showed them to her and I thought it was something she would enjoy making over spring break.

(We cheated with the frosting... The recipe actually says to use Cool Whip, but we opted for the 'ol store bought frosting.)
Apparently Abby didn't like the taste of the batter on the beater...
YUM!! These were very easy, yet time consuming to make. After the cupcakes were in the oven a friend gave me the great idea to put the batter into ziplock bags after coloring it and then snip the corner of the bag and squeeze it into the muffin cups. That would have taken a lot less time!! You could also make a layered cake out of it, but that would also take a lot of time! How fun, though! You can't help but smile as you bit into the rainbow! We will definitely be making these again!!

YUM!! So do you print off recipes and then put them in a three ring binder? What a great idea!! I've been putting them off to the side to write out some day. Grr should have called you about that one! Your a genius!
